  1. Grind Tomatoes, Green Chillies & Ginger Garlic Paste finely into purée & grind Onions also separately into paste in a mixer grinder.
  2. Wash Kathal properly, now take a pressure cooker, add kathal in it with 2 Cups Water, 1/2 Tea Salt & 1/4 Teaspoon Haldi Powder.
  3. Now close the lid & give 1 whistle on medium flame.
  4. If you want to remove seeds of kathal, they can be removed easily after kathal becomes soft in cooker.
  5. Now after 1 whistle, turn off the flame & let the cooker depressurise naturally.
  6. Now take a kadhai, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.
  7. When smoke starts coming out of Kadhai, turn off the gas & let the oil cool down a bit.
  8. After some time, again turn on the gas & keep it on medium flame.
  9. Then add Khade masale in it & let them sizzle.
  10. When they start sizzling, add finely grinded onion paste in it & cook them till it become into golden brown on colour.
  11. If paste sticks at bottom while cooking, add some water in it.
  12. After 3-4 minutes, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.
  13. Meanwhile, open the lid & take out kathal pieces from cooker & remove its seeds & keep them aside.
  14. Now after 5-6 minutes, when oil is released completely, add spices mix in it & roast them for 2-3 minutes.
  15. After 2-3 minutes, add kathal pieces with 3/4 Teaspoon Garam Masala, 1 Teaspoon Roasted Kasuri Methi, 1 Small Cube Butter & some water & mix them properly.
  16. Now cook Kathal in mixture on low flame with closed lid for 4-5 minutes.
  17. Your Kathal Ki Sabzi is ready to be served.
