  1. Chop the onion and sauté in the butter over a medium until translucent, then crumble in the stock cubes and mix.
  2. OPTIONAL Whilst the onion is sautéing, blend the spinach with 400ml of water [using a smoothie machine] to make a spinach water, otherwise use 550ml of water.
  3. Pour the peas and blended spinach water (or 550ml of water) and simmer for 5 minutes or until the peas are cooked.
  4. Blend the soup until smooth, mixing in the milk and seasoning with salt and pepper.
  5. Serve with fresh bread and optionally a ribbon of cream or yoghurt.

Remove from heat and stir in spinach, parsley, dill, and matcha water. Using an immersion blender (or a stand blender, working in batches), carefully puree until very smooth. (For a thinner soup, add a little water.) Soup is a very underrated dish. It's a healthy start to a meal as it means you won't fill up on unhealthy things later, and can even be a meal in itself. Let the soup cool for a few moments, then. Add the oil and all the veggies, peas and herbs.
