Break each egg into a small bowl and then add slowly and gently into the water. Poach for 3 mins (longer if you don’t like the egg soft). Remove with a slotted spoon and drain on kitchen roll.
  5. Squeeze the lemon over the mushrooms and a splash of olive oil.
  6. Layer some rocket leaves and the mushrooms on the bread. Add the poached egg on top. Season and enjoy 😋
